Use your hands to roll the mixture into small, smooth spheres, about the size of a golf ball. Place them on a baking sheet lined with parchment paper and chill in the freezer for 10 minutes to firm up.
While the cake balls chill, melt the chocolate in a microwave-safe bowl or double boiler, heating in short bursts and stirring until smooth and glossy.
Remove the chilled cake balls from the freezer and, using a toothpick or skewer, dip each one into the melted chocolate, coating evenly. Gently tap off excess chocolate and place the coated balls back on parchment to set.
