  • 1/2 cup powdered sugar sifted
  • 1/4 teaspoon sea salt plus extra for sprinkling
  • 1 teaspoon vanilla extract optional

Method
 

  1. Gently melt the chopped dark chocolate using a double boiler or microwave in short bursts, stirring until smooth and glossy.
  2. In a mixing bowl, stir together the peanut butter, sifted powdered sugar, sea salt, and vanilla extract until the mixture is smooth, sticky, and easy to scoop.
  3. Using a small scoop or teaspoon, portion out small balls of the peanut butter mixture and gently roll them between your hands to create neat rounds.
  4. Place the peanut butter balls on a parchment-lined tray and chill in the fridge for about 30 minutes, until firm but still pliable.
  5. Using a fork, dip each chilled ball into the melted chocolate, turning to coat completely and tapping off excess chocolate.
  6. Place the coated truffles back on the parchment paper and sprinkle lightly with sea salt if desired.
  7. Allow the chocolate to set at room temperature for about 10 minutes or chill briefly in the fridge until firm and shiny.
